Ingredients (makes 4 servings)
Base
- 2/3 cup almond flour (68 g/ 2.4 oz)
- 1 tbsp melted butter or coconut oil (15 ml)
- 1 tbsp powdered Erythritol, Swerve or Allulose (10 g/ 0.4 oz)
- 1/2 tsp sugar-free vanilla extract or a pinch of vanilla powder
- 1/8 tsp sea salt
Filling & topping:
- 1 cup cream cheese (240 g/ 8.5 oz)
- 1/4 cup heavy whipping cream or coconut cream (60 g/ 2.1 oz)
- 2 tsp fresh lemon juice
- 1/4 cup powdered Erythritol, Swerve or Allulose (40 g/ 1.4 oz)
- 1 tsp fresh lemon zest
- 1/2 tsp vanilla powder or a pinch of vanilla powder
- 1 cup blackberries or an equivalent ampunt of any low-carb berry jam (145 g/ 5.1 oz)
Instructions
- Mix all the base ingredients together in a bowl.
- In a clean mixing bowl add all the filling ingredients and mix using an electric whisk until thick.
- Spoon the base evenly across 4 glasses. Add the cheesecake filling.
- Puree the blackberries in a blender until smooth.
- Top with the pureed berries.
- Serve or place in the fridge to set overnight.
- Keep refrigerated for up to 5 days.
