Ingredients (makes 4 servings)
- 1/2 cup whipping cream or coconut cream (120 g/ 4.2 oz)
- 2/3 cup mascarpone cream or cream cheese (160 g/ 5.6 oz)
- 1/4 cup powdered Erythritol or Allulose (40 g/ 1.4 oz)
- 1/4 cup lemon juice (63 g/ 2.2 oz)
- 1 tsp lemon zest
Instructions
- Place all the ingredients in a mixing bowl: cream, mascarpone (or cream cheese), powdered sweetener (Erythritol-based or Allulose), lemon juice and lemon zest.
- Mix with an electric whisk until thick and smooth.
- Spoon into jars or glasses and refrigerate for 1 hour before serving.
- Optionally, top with more lemon zest and/or some whipped cream.
- Store in the fridge, covered, for up to 5 days.
